Navatta proposes its vacuum cutters for processing high-viscosity products such as jams, salty and sweet creams, frostings. They are especially suitable for chopping/mixing/cooking products that combine cutting/mixing processes with thermal processes.
The internal surfaces can be heated via a steam jacket or direct steam injection while the chamber is under vacuum. The machine body is shaped as a frustum of a cone, inside which turns a powerful system of blades.
The product loaded into pieces of medium size is finely chopped and mixed, without risk of oxidation. On request, the machine also allows the concentration of the product. Furthermore, the product can be cooked at a maximum temperature of 105°C.
