To meet the increased demands for string cheese, MilkyLab developed an automatic line that comprises steam cooker-stretcher, automatic moulding machine with special extruding system, pre-cooling and automatic cutting system.
With this line it is possible to produce string cheese with fixed diameter and variable length. The special extrusion system provides parallel and separate strings of cheese, with extreme precision of shape and weight.
The cooling system consists of independent transfer channels for each string of cheese. While the product moves forward, the nozzles spray cooling water or brine. Water temperature is controlled by a heat exchanger.
The automatic cutting system is equipped with separate knives for each cheese string. The whole line is arranged for CIP washing system. The Trial & Training Center of the company is available for testing the production of string cheese and other dairy products or to develop new recipes.
