The great experience in the sector of pasta machines gave rise to Pavan Group’s innovative solutions that involve much of the process necessary for producing ready meals. In the forming part, i.e. the preparation of the fresh pasta before cooking, Pavan proposed a combined machine for making pasta sheets for lasagne, cannelloni and tagliatelle, putting together a well-tried and tested dosing and pre-kneading system with a real kneading tank and a sheeter renowned for its effectiveness. The result was the MKS, manufactured in various versions and that proved to be the ideal solution for dedicated lines for lasagna and cannelloni meals. Total vacuum version of this machine has been created a mix of dry pasta technology (patent since 1953) and that of fresh puff pastry. The effect of the vacuum, especially when used from the first combining of flour, water and eggs, preserves the colour much better, inhibiting all the non-enzymatic oxidation processes and, above all, gives a firm, more resistant and consistent pasta, that all palates worldwide are turning their attention to.
