GEA has moved into the bakery sector with the acquisition of Comas, supplier of industrial processing equipment for cakes, pies, biscuits, crackers and snacks. The complete range includes pie and tart machines for producing pie shells, filled and lidded pies, tarts, quiches and cheesecakes.

Whether for small-scale or high-capacity production requirements, the proposed systems can be configured to complete end-to-end processing, and for integration with filling depositors and molding units for customized lids. The picture shows the LTT model for industrial-scale depositing in indented baking trays of tarts or pies and their transfer to GEA tunnel ovens.

The system includes a brushless chain conveyor that ensures perfect positioning of the trays underneath the working units, on which the dough billeting extruder and the blocking press are fitted. The unit’s volumetric extruder portions the dough billets and accurately deposits them within the indents of the tray.

The blocker then carries out the more delicate job of blocking the pie or quiche, using a pneumatic compensation system that ensures the perfect shape for every indent, every time. The line can be equipped with volumetric filling depositors and rotary molders for forming lattice tops or lids.
