Modeling machine for sausage specialties


The casing and modeling machine produced by Fava Giorgio Axel is suitable for processing whole products such as coppa, rolled bacon, bresaola, loins, salted meat, hams etc. that intended for seasoning or cooking, to obtain products for slicing. The molds diameters range from 80 to 150 mm, and their lengths from 500 to 1100 mm. The unit can handle both natural and synthetic casings. The special design allows to obtain following results: total modelling of whole products with automatic flattening of the heads; reduction to the minimum of the operator effort thanks to the special constructive structure of the funnel; maximum hygiene thanks to the molds that have open structure and that are completely removable. Higher productivity is achieved thanks to the automatic re-opening of the mold’s cover at the end of the cycle. Safe operation is ensured by the presence of certified sensors controlled by a suitable control unit. The perfect casing of rolled products is achieved due to the rigid construction that assures a cylindrical and compact product and the reduced backlash between pads and mold.
