During cheese maturing, it is essential to maintain an ideal ratio between relative humidity, temperature and air change in the storage rooms. To obtain environments with these characteristics, the company Tecnica del Freddo builds channeled cooling and air conditioning systems.
Ideal for large warehouses, they operate automatically by controlling the decreasing and increasing relative humidity and by exchanging the air continuously from the outside through a feeding duct. The plants are based on UTA (Air Treatment Unit) equipped with filtering and ventilating sections, humidification systems, cooling and heating batteries, which are regulated by microprocessors communicating with temperature and relative humidity probes.
The treated air distributed into the environment through supply pipes returns to the UTA via recovery ducts. With a well-designed air distribution network, it is possible to ensure a uniform air conditioning of the room and to keep every cheese in the best maturing condition, regardless of its location in the warehouse.
