Ice Tea soft-drinks (flavoured tea-based drinks) hold a considerable market share within the sector of soft drinks.  L’Italiana Aromi, specializing in the production of a large range of flavourings for the food and pharmaceutical industries, recently published an in-depth study on brewed tea: a scientific classification on the main soluble constituents of the traditional black tea infusion, prepared in a “home-made” way. The so-called brewed tea. L’Italiana Aromi’s tea from real infusion, which is the subject of this analysis, is made up of the same components and in the same proportions as the one made at home. The study reveals that teas from real infusion are different from those produced with various types of powders or soft extracts. L’Italiana Aromi established which chemical, organoleptic and aromatic characteristics this product must have to be able to call itself “brewed tea”. Even though a legal reference standard establishing the difference between extract and infusion still doesn’t exist, the latter can be obtained with only two ingredients: hot water and tea leaves. Just like the company’s beverage: real liquid infusion, ready to be diluted.
