Pizzaform is a special Cuppone patented dough-press, available in five models, that shapes pizza dough bases measuring up to 52 cm in diameter. It can shape up to four hundred pizzas per hour without having to employ specialised labour. The perfect uniformity in the shape and thickness of the pizza dough bases – without giving up the traditional edging – is obtained thanks to the special shape of chromium bevelled edge plates, which also allow to change the thickness of the bases. Thanks to the action of electronically controlled plates, a solid thin layer of starch gel is formed on the external part of the dough mixture. This starch layer holds back the gas produced in the natural fermentation of the dough and produces perfect and even cooking inside the pizza bases. The technical specifications are: work surface height 550/600 mm; electric power supply 230 V/50 Hz; weight from 143 to 196 kg; absorption 4.2 to 6.6 kW max. Entirely made in stainless steel, this press is equipped with all the safety devices required by international legislation.
