Grave-Forma is a no-stress moulder with a motorized pressure belt. Proposed by Turri, it stretches the dough gently without damaging its fibers. Able to work pieces from 100 to 2400 g, this unit allows to obtain loaves and baguettes up to 60 cm long.
The dough is gently pressed by flattening rollers and then pre-rolled by a stainless-steel wire mesh. The next step under the fixed pre-flattening table gives the dough the first stretch. The pieces move then underneath the final motorized loafing belt, which gives the final shape to the loaf.
The belt speed can be adjusted to control for how long the piece remains under the belt, thus obtaining the desired length and shape. Special adjustable lateral rails allow the production of squared ends.
The practical lifting system (with motorized cylinders and manual pistons for the tables) allow the spreader to rapidly exclude the moulder for productions that do not require moulding.
