Production of fresh, dry or frozen pasta nests

The NI/540 nester from Pama Parsi is a machine for the production of nests of fresh, dry or frozen pasta. Tagliatelle nests are produced by rolling or drawing, cutting and forming from a 540 mm sheet. The nests are then automatically placed on 120 × 60 cm frames.

The same frames are then stacked and inserted into the static dryers, for the drying process. Interchangeable molds allow the production of spaghetti alla chitarra, fettuccine, tagliatelle, pappardelle, tagliolini or special pasta formats. The cutting length of the pasta can be selected according to the desired weight of the nest.

The nester includes: single lamination unit for adjusting the thickness of the sheet, with a pair of stainless steel rollers; speed control inverter for direct coupling with the sheeter or extruder machine; electric panel placed on the machine, complete with PLC and inverter; storage with capacity of six frames, complete with drive and automatic release clutch in case of jamming.

The machine features a carbon steel structure with special epoxy paint, stainless steel shafts and cutter. Stainless steel Aisi 304 is used also for the pair of 540 mm refining cylinders, diameter 90 mm approx. for normal pasta.
