Features and strong points
The machine is managed by an industrial PC, which runs a 15” wide screen with USB port and touch-screen interface, that allows to view and take action on the various processing stages.  All parameters can be entered by the operator (cooking time, condensation and washing times, blade or stirrer speeds, steam temperature), and can be stored with the name of the single recipes, with possibility of remote access.  All contact parts with the product are stainless steel Aisi 316, whereas other parts are stainless steel Aisi 304. The cutter features a drive installed on the back of the frame and not under the tank, for easier loading of the goods and to avoid the contact with electric components in case of leakage. The tank is closed by a series of toothed rings, providing for higher safety especially for under vacuum or pressurized processing.  The components for opening/closing the lid, and the rotation of the rings, is automatically controlled by a series of sensors and hydraulic cylinders.  The product is heated with direct steam injection, whereby temperature and pressure are entered from the PLC, which adjusts both, the temperature of the product and the thermal gradient of the tank wall. Two nozzles inside the tank provide for direct steam injection; steam temperature and pressure are controlled via PLC. The bottom of the tank is fitted with a double valve system that acts on a special bush made of ceramics as a guarantee for a long lifetime. The bottom stirrer and the counter-rotating lateral stirrer are made of Teflon. The first prevents products deposits on the warm tub walls, and enhances the cutting effect. The second removes product residues from the tub bottom when the product is cut and discharged.  The standard unit layout includes one water-meter, but four additional meters can be added for the automatic metering of other liquid products. A very useful addition for larger versions is the product lifting unit, that will help to improve productivity and optimize work organisation.

    1.The volume of the machine.,
    2.How much can it produce..
