Turri‘s Gravi-Line is the universal no-stress line for the processing of highly hydrated dough.

The no-stress technology of all components can produce a wide range of products (ciabatte, round breads, long loaves, etc.) as if they were handmade, natural and with ample air-pockets, without the need to add chemical products.

Perfect for highly hydrated doughs, it can divide even the softest and most sticky doughs with up to 90% of water with 4 hours of proofing. The No-Stress technology ensures that the dough is not mistreated or compressed throughout the process. Cutting is performed by a patented system with high-precision weighing conveyor belts that control the cutting knives.

The production reaches 2500 pieces/h of 250 g. The line can be combined with rounder and moulder to form round and stretched doughs for pinsa Romana, pizza, ciabatta, baguette, round or gluten-free bread.
