The cooking-stretching double-head machine from Inox Arte, Mod. IA/95/2 V.150, is designed for the continuous production of pasta filata cheese starting from sliced curds. Curds, coming from the curd slice, arrive in the cooking vat and are then carried by the scrolls to two stretching sections equipped with diving arms. The stretching water is kept at the ideal temperature thanks to the double-jacketed vat. The double-jacketed stretching section contributes to ensure the adequate moisture and softness to the pasta filata. Entirely made in stainless steel Aisi 304, with contact parts coated in high-temperature sintered Teflon Dupont, the machine features a stretching vat with large-diameter augers that facilitate the transit of the product with minimum effort. The feed rate can be adjusted according to the handled product. Other technical features: oil-bath transmission enclosed in a protective stainless steel casing; double jacket on bottom and side-walls; cutter with adjustable knives.
