Wine making industry and distilleries generate millions tons of residues per year all over the world. Such residues, even though not intrinsically dangerous, can pose serious polluting problems if directly released in soil or water because of their high organic matter content and of their production concentrated in a limited period of time. That’s why it is necessary to dispose of them in an appropriate manner.
