Milkylab offers a steam stretching system for mozzarella, pizza cheese and processed cheese. This system results in considerable cost savings and a lot of advantages: there will not be more fatty liquid to be purified as all water added is absorbed by the product during steam stretching; significant energy savings by reducing steam consumption; reduction of heating and stretching time thanks to the steam injection into the racket; standardization of moisture in the final product; easy use thanks to recipes set in the PLC to control the production ingredients. This machine is suitable for processing both fresh and industrial block of curd, buffalo curd, powder ingredients, spices and flavouring, or waste products for cheese spread production. Built in Aisi 316 stainless steel, double wall vat for the steam injection into the jacket at 4 bar. The product stretching-melting happens by direct steam injection, or with steam injected into the jacket.
