Preserving quality cheese

Thanks to flowpacks produced with Tecno Pack equipment, the dairy factory Mauri achieved an important aim: protecting the integrity of cheese created from the experience built up over generations

The history of Mauri roots deeply in Lombardy, a region that has always been rich in first-quality milk. In the dairy factory of Treviglio (Bergamo), where every day more than  200,000 litres of milk are collected and processed every day, production reaches approximately 5500 tons per year of cow and goat milk (Taleggio DOP, Gorgonzola DOP, Quartirolo Lombardo DOP, Caprino, Caprino di capra, Crescenza di capra). At the end of the production process, all cheese is transferred to the Pasturo site, in Valsassina, for the following seasoning and packaging process. The wheels of cheese are seasoned in natural caves, so-called casere: a perfect environment due to the natural ventilation system.

A high-range package

For almost thirty years Tecno Pack has been designing and building flow pack packaging machines and automatic packaging systems with a dynamic team of processionals, developing tailor-made solutions ranging from controlled atmosphere to high-speed applications up to the most extreme automatism. For packaging its high-range cheese, the dairy factory Mauri approached the Schio-based company (near Vicenza), whose technology allowed to introduce an innovation in the packaging of this product, fully respecting the integrity of this high-range cheese. In fact, to preserve cheese integrity, the flow-packaging must be particularly accurate; it has to protect, preserve and present cheese in the best possible way, and the equipment used has to be versatile, fast, fully automatic and electronically servo-driven. Tecno Pack studied the most suitable solution with the customer, and supplied the first packaging machine FP 027 inox, an electronic machine with lower reel, designed for packaging fragile, irregular or heavy products that need to be carried by the packaging material.

It is also a specific model for modified atmosphere thanks to the tightness of the packs obtained using the “box motion” sealing system. The combined use of motors and linear actuators in the control of the transversal sealing unit allows for aesthetically neat high performing packs; furthermore the cantilever frame and easy to use design cut down on maintenance and cleaning. The partnership between Mauri and Tecno Pack continues with the supply of other equipment, with which now Mauri can package all its products in flow pack. The co-operation of these two companies generates great benefits also for consumers, who will be able to purchase cheese that is always fresh and whole, thanks to the micro-climate inside a package that is made to measure and perfectly sealed, and protects it from shock during transport. Significant plusses also in terms of traceability, in compliance to market requirements, thanks to the implementation of latest film coding and labelling systems.
