Double screw water and steam cooker-stretcher screws

The horizontal water and steam cooker-stretcher FOA from Roversi with two screws with variable speeds are suitable for handling cheese, curd and DOP mozzarella.

During the stretching process, the curd is heated, submerged by warm water thanks to the jacket, and mechanically stretched with reverse screws.

Excess water can be removed at any stage of the process and replaced with fresh water through a high temperature counter installed as standard. This process complies with what is described in the product specifications of Mozzarella di Bufala Campana DOP.  The productivity of the various models ranges from 70 up to 3000 kg/h, depending on the product, with a processing capacity of 30 to 1000 kg at a time.

The stretcher is equipped with two independent screws, which operate in both directions (forward and reverse) even at different speeds. A special coating prevents the product from sticking to the walls and screws, thus enabling a complete emptying and perfect cleaning. This stretcher offers several advantages, including energy savings, increased stretching speed, healthy product and longer shelf-life.
